    Default How to store syrup for making candy later?

    I'm done. I've been slaving in the kitchen all day bottling syrup and making fudge/candy. I have about a gallon left of syrup that I plan on using for candy. Can I just put it in mason jars and put them in the fridge until the next time I decide to make some candy? Does it matter that when I filled the (future candy) jars the temp on the syrup was probably only around 120?

    2012: 2 taps 1 quart of something resembling syrup and 1 cup of sugar
    2013: 12 taps 3 gallons of syrup
    2014: 20 taps 4 gallons of syrup
    2015: 25 taps 10 gallons of syrup
    2016: 60 taps 12 gallons of syrup
    2017: 75 taps

    Keep it in the fridge or the freezer, it will be just fine. If in the freezer leave a little head space, just in case.

    Put it in the freezer,make 100's lb of candy,and when i open a can,rest of it goes in the freezer,been doing it for the last 5 yrs
