In the Deep Freeze
Looks like I've got about 100 gallons or so frozen solid on the trees. I guess that's about the best way of keeping the sap fresh until I can collect it. My only problem is that some of my bags are going to be overflowing the next time we have a good run. Next week looks promising. I've swapped a few bags with less productive trees to help keep that at bay. I'm limited to weekend warrior status so I'll be gearing up for a big boil next weekend. The deep freeze killed this weekend. The snow is still deep up here too. Collecting is still an issue. Ha Ha. Always reminds me of the famous question I get, right after I explain the entire process of making this stuff.
