I think there's a huge potential market. My wife runs marathons and for years has been using maple candy as her "energy food". Some of the products for athletes like "Gu" are highly processed and pretty disgusting to eat.
That said, there is debate amongst sports nutritionists as to whether straight maple syrup is an ideal energy food on its own, but it is certainly tasty and packs some good sugar energy.
I know the Untapped product and they are definitely onto something, but I personally shy away from one use throw away packaging type products. You have to open it and consume the whole thing or it becomes a drippy mess.
We have been working on a couple products for the athletic market that are easier to transport and consume. While there is some nutrition science at work here, it is likely mainly about marketing.
