Are you selling product at the booth? At the New York State fair, our association has a nice booth and they sell a ton of maple products. This gets more people introduced to real maple. Good luck on yours. By the way, if you get as busy as ours you will need a lot more people to work the booth. We require a lot of association volunteers to cover the booth at all times. They work specific shifts and it is all scheduled ahead. Ours makes cream, candy, coated nuts, popcorn and others, right there for the public to see, of course along with syrup sales. Maybe you can get things going to get bigger in a few years. Sounds great so far!

Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
