Gathered my last this morning. One tank was 1/2 full and sap was good, the other I dumped because it was starting to change flavor and didn’t want to ruin what I had.

No it wasn't buddy but it didn't smell good when I boiled it. The flavor wasn't up to my standards either, there was a bit of a bacteria after taste to it. Most people would think that it was good but I'm used to a much better tasting product. I know that the sap ran all night and probably would be coming in now if the vacuum pump was on but I'm not interested in making a product that I wouldn't put on my shelves. Now if bulk syrup was bringing $4.00 per pound instead of $2.10 or less I would continue until the trees stopped running.

Russ...thats the funny thing about syrup...everyone has their own idea about what tastes good.its pretty subjective...glad you had a decent year..ahh the days of $4lb syrup...i will never forget as long as i live that year...Bascomes said i will give $4lb for anything you can get in a barrel, i told them i could not filter ths stuff..they said thats o.k....i put a 55 gal bbl under my autodraw and made some serious money..
Bap and hut h,,glad to hear you are getting good sap still!,
Sap yesterday morning was crystal clear and fine tasting..got 4loads over thd course of the day..freaking exhausted yesterday..did not crunch od boil..gonna head to thd sugarhouse now and see what all that sap looks like ( all my tanks ars full, almost 4k gallons) sap stays pretty cool in my tank room...the last sap (warmest) is in 2 of thd smaller tanks,,if its junk i will dump it...but hoping its allright...will crunch and doil what i can and push it thru with permeate (thats the plan anyways)
Sap was still running at 100 gph at 7pm when i got thd last load and cleaned the woods tank so there should be some in the woods this morning...

Sap in the sugarhouse is fine..going thru the r.o at 47.3 deg,,,,8.5 perm 1.75 con. Making 5.8 ish%......glad i did not crunch it yesterday..i would much rather have 1%sap at 70deg than 6%con at 70 deg.......900 gal in the woods now getting crunched
Russ i have 2 ppl that by 15 gal. Between them..thay have stopped 2 now but the flavor has not been strong enough for them yet...i think i will make them happy tonight

I got boiling as soon as the r.o was rinsing..i have my 2 head tanks above my sap tanks in the tank room and i saw i was running out of room in my one head tank i wanted to use so i kept droping concentrate into my sap tank feeding the r.o until it all fit..i was making 12% towards the end of it..checked head tank for smell and rope,,was fine..boiled great..keep checking the flu pan float box which smelled fine..math definatly did not work out tonight..thought i was going to make 50 gal and would be surprised if i made 40..smelled great boiling nice strong B..having some on my icecream now...tasty..
Some friends with a 2x4 (i think) have been stopping by with 400 gal loads of sap and i have been crunching it into 100 gal loads for them..i made them a bacth night befor last which they boiled yesterday..i guess they had some trouble late in the day boiling..little scorching madey..they brought me some of the syrup they made because it did not look right...ropey...really ropey..funny it did not smell too off...6% at 70 degrees all day is bad news...im very lucky the tank shed keeps sap nice and cool.
Pump going might have 800 gal by morning..not sure i will boil it..would like to think we can get 1more run..we will see

Had to break my stick off yesterday...my sap had a slightly sour smell but the concentrate concerned me..boiled some on my kitchen stove to test..dumped what i had..was blessed with a great season.
