If I'm seeing right, is the original structure on a floating slab, while this new section is on a concrete block foundation? If so, why did you go block this time around?
Both are floating slabs I just added a row of block around the new addiction for washing down and keeping the walls dry

On a maple tour about 10-11 years ago, one of the stops had a plastic sheeting hood. It ran all the way from the pans up to the cupola but the condensate dripped on the earth floor. That was on a larger evaporator, something in the 4x12 range. That producer had a bunch of ribbons on the wall, for winning 1st, or second best at the New York State Fair. He has since gotten out of farming (He was also a dairy farmer) and he got his guide's license.
Dave Klish, I recently ordered a 2x6 wood fired evaporator from A&A Sheet Metal which I will be converting to oil fired
Now have solar, 2x6 finish pan, 5 bank 7x7 filter press, large water jacketed bottler, and tankless water heater.
Recently bought another Gingerich RO, this one was a 125, but a second membrane was added thus is a 250, like I had.
After running a 2x3, a 2x6, 3x8 tapping from 79 taps up to 1320 all woodfired, now I'm going to a 2x6 oil fired and a 200-425 taps.
Up dated photo i finally finished staining it this year
