    Default multiple tree types for one product???

    I have about 75% sugar maples, and the other 25% are reds, and silvers, is it ok to mix those saps together in the boiling? Will the flavor outcome be harmed? Should i boil down each type separated?
    Starting for the first time this upcoming season (2014) 40 taps with 24" drop lines, 30 5 gallon leaktite food grade buckets with lids, will evaporate over a cinder block pit with steam table pans.

    Go ahead and mix am all together. The only real differences are possibly the sugar content(Reds are usually a little less) and possibly the amount of time the different species run sap.

    2017- 2400gph. Lapierre RO, 10" filter press, 5000 taps

    I have 22 taps in red maples that had a high of 3.2% this year. These red maples always have a high sugar content.
    30x8 Leader revolution, wood fired blower, steamaway/hood. 903 taps all but 54 on pipeline and 3 vacuum systems. Hauling sap this year with a 99 F350 7.3 diesel dump and of course back up is the Honda 450 and trailer.

    Reds in Minn have no difference in sugar content and or flavor.
    They typically run 2 to 4%.
    Silvers while the sugar content is just as high seem to have a bolder richer flavor--at least around here.
