I always start mine by turning the propane tank on slowly , then the red control knob all the way counter clockwise , then push the little brass stem to let the propane start to flow while holding the bbq lighter on the burner , I got mine at canadian tire , mine also has a timer on it , it has to be turn on all the way and shuts the fryer off after 10 mins of running , the timer is a pain in the butt , so I just turned it on all the way and put a piece of duct tape on it so it stays in the on position and doesnt shut off after 10 mins of run time.
What size is your fryer ? I looked at home hardware's website to see if I could find the one you have and only found a 30 quart one , is that the one you have ?
If that is the one you have then the propane line is the exact same as mine , same timer and red shut on/off knob, pretty sure they are probably all the same for the most part.
As for the airflow down by the burner , if you close that all the way you will not get a good flame , when i first got mine I fired it up and moved the airflow "thing" ( not sure what it is called lol) to different positions to see how it worked and what the best position would be and have not moved it since . You want the flame to have blue tips on it , yellow tips means it is not getting enough air and cause's soot , the bottom of the pot turns black .
