    Collecting birch sap for our first time this year. 300 taps. Is there anyone else out there collecting birch If so, get in contact

    Try searching the forum, there was a link to someone tapping birch trees in alaska. Pretty interesting website link they had posted.

    Default Update on Birch

    As I said, we collected 500gals and we’re making birch wine out of it. The first batch went bad and tasted like popcorn, not sure why. If anyone knows drop a line!

    The second batch was great. Everyone that has tasted it say’s it like ice wine. We had an expert taste it and we receive 18/20. We have 1000lts or 220 cases of 375 ml bottles.

    We are designing labels and are calling it “Lady of the Woods” We are hoping to have the design and labels completed for Wine Fest 2006 in November.

    We will let everyone know how its goes.

    The collection period is extremely short, only approximately 3 - 5 weeks per year. Generally sap starts to flow in April, and the collection period is over when the leaves start budding. We got 21 day last season.

    Craig could you post a recipe or general procedure you used to make the wine? It sounds very interesting and I would like to try it this coming spring.

    I googled birch sap wine and there are a ton of hits
    2 x 6 Grimm raised flue for 2012 season. Rebuilding a 3 x 13 for 2013. 51 Ford 8N, St. Bernard, 30+ chickens.
