    Default Syrup Grade

    I've been helping friends make syrup for the last five years and this year has produced the finest grades I've ever seen. I was just wondering if anybody else was getting the lighter grades as the season has been progressing.

    So far this year our syrup has been a lighter color as well. We have a small hobby operation {60 taps} in northern Wisconsin and are only in our second year. Made seven gallons of syrup so far all light to medium. Locally most producers are reporting a higher sugar content as well.

    Roughly half of my syrup has been light amber, 1/4 or a little more medium and the balance dark amber. I have made nothing darker than A Dark to this point. The weather conditions were ideal for keeping the sap cold and microbial activity was slow. That will change with 50 degree days and now nights warmer too. Mark
