The young man who did the interview was familiar with sugaring back home in Syracuse, and had been working in a friend's sugarhouse just the weekend before.
We're all through here in Potsdam. I made three gallons of very dark today with what came out of the flue pan. It's dark, but nicely transparent, smells and tastes good. I made 125 gallons for the season.
We were grade B on color tonight but good flavor with a carmel aspect to it

Slush in the releaser at 10:00 so we shut down the pump for the first time since Sunday noon. Two inches of snow tonight looks really Christmassy out there.

We drained and finished what we we had in the pans yesterday and our final tally was 95 gallons. Our goal was 100 so we are pleased considering the crazy weather patterns and the fact that we did not run our usual amount of buckets. The only very dark syrup was the last 7-8 gallons that we had to batch cook to finish up so we are happy with that. Had a life changing experience this season by introducing an RO to the operation. Going to start pulling taps and cleaning up equipment today.

I imagine you'll get a couple more days in South Colton being just a bit cooler than Potsdam. I'm pulling taps today and finding trees still running. It feels like maybe I pulled the plug a little early, but it's hard to keep sap quality where it should be when it's above 50 degrees.

Our local public radio station just posted another maple syrup article on their web page NCPR.org Some great photos of the old times, but I especially like the one of the fellow tapping with a backpack mounted gas engine rig.
Another strong run today (14th in a row) but low sugar and cloudy sap. The peepers peepeth and so we'll see if we can process it tomorrow.
