Finished off Sunday's boil today. Not sure exactly how many gallons of sap were boiled but ended up
with 1 3/4 gallons of liquid gold. Had a rolling boil at 10 AM and stopped stoking the fire hard...

I can boil down 40-50 gals sap in a 8 hr day on a concrete block type burner with a 6" deep 2' x 2' SS pan along with a 6" deep 12"x 20" warming pan.

Had terrible results with reds on gravity last year and other years to the point where I doubt they will get tapped again.

The Maple wine was a interesting experiment. It takes a good amount of aging and isn't particularly flavorful like red or white wines.

Its been a frustrating sugarin season here with some trees productive and others not. I know I am not alone.
With 24 taps out for 1 month I expect to wind up with 3 gallons syrup after a final boil...
We have about the same size operation with 24 taps and are running a 2' x 2' x 6" flat pan.
This is a good size for doing gallon batches of syrup or 40-60 gals per boil.

Finally today the trees are really spitting out some sap in zone 4b. Many trees were overflowing gallon jugs by 3-4 PM.
