Had my friend who runs a brewery check my sugar content. All mostly big open crown sugar maples , 2.4%. Was the highest I've had since he's been checking it for me.
Yea , that's my experience with them. Some that flow look exactly like the ones that won't give a drop....?

Made about a quart and a half off of some really fresh and apparently high % sap this past week. Was the lightest color finished I've ever done. Hope y'all flow like crazy this week!!

Ive collected 34 gaL. Boiled 10 gallons all the way down yesterday that was really fresh. Made the lightest syrup I've ever produced!
It was hit and miss when I collected yesterday for sure.
Took 35 gallons down to about 8 yesterday. played with new pan. had to do some modification to my arch for it to fit.
Put 8 more taps in yesterday , all were flowing pretty well. Hopefully collect my first run this afternoon. May boil some Saturday.
Tapped 3 sugars here in Tennessee this evening. They were dripping pretty good.

Yes , Id say you are frozen up there. Just now getting our first real winter weather here.
Keep a 5 gallon bucket of water close. When you consolidate the pans , pour it in the empty pan. It keeps the hole covered so heat won't escape and keeps the what would be empty pan from scorching....
