I would decrease the sap depth to 1.5-2 inches, many go lower. Also get your fire off the ground an on a grate. You will have a better fire and evap rate if you hve air moving throught the fire.
If your buckets are covered and the sap looks clear and not yellow I'd bet there is very little rain water in there. The yellow could indicate rain water that ran down the tree trunch and fell in...

You will need a hydrometer made for syrup. The beer one won’t work.
