I would decrease the sap depth to 1.5-2 inches, many go lower. Also get your fire off the ground an on a grate. You will have a better fire and evap rate if you hve air moving throught the fire.

Userj8670, At this point I'd just leave em and see how things turn out. You could always tap new trees (if you have more trees available) later in the season if you are seeing your original taps...

You will need a hydrometer made for syrup. The beer one won’t work.
