Tin pans are fine. They have used them longer than stainless just more susceptible to scorching warping and don't last as long if you don't take care of them
Inwould run the dividers the other way in the front half because you want to draw syrup off on the hottest part of the pan which is usually the middle which would be the back of the front(syrup)...
The problem is the ramp. I would do what your talking about and raise the ramp and maybe even the grates. If your running a blower than make sure it's the right size maybe around 200 cfm. And also...
