Tap them all. Mixing sap does not cause off flavor.
With such a short run you will not have a sufficient column of sap to pull vacuum.

I drain my flue pan when it's getting really cold like now, if my syrup is really sweet and close to syrup I will just let it be.
I find that hollow rope work best for keeping line taunt, one at the top and a few more cut in at tees as needed.
I put in two 800ft 3/16 runs today with 36 taps each and surprisingly they ran like crazy today.
Went out about 1130 very warm and not a drop was running. Running now at a good pace now at 1.8% weird day for sure.
How long of a run do have over that 60 - 70 feet of drop after the last tap?
If it's just you and yours using the syrup (not selling it) then make your own choice with regards to how you store your raw sap. Lots of sap has been stored in what is now considered "inappropriate"...
It's recommended min 30ft drop from the lowest tap for optimal vac. Not sure if you will have enough vacuum to overcome the size difference between 3/16 and 5/16 might be better to use standard 5/16...
