Last year I tapped January 15th. Temps after Jan 3rd are looking good here and I may tap the weekend of the 5th.

I used self tapping screws with fender washers. Drill from the inside thru the blanket and grind off what comes thru to the outside. 2 seasons no issues.
I ended up with 6.75 gallons over a 5 week season. Boiled 4 times and syrup color varied from light amber to amber. First boil is some of the lightest I have ever made.

Set my 46 taps today. Several trees dripping immediately. One tree had sap ice falling from the tree as we walked up.
I have looked at the pics a few times and think you may get a better boil if you reduce the space in your ramp to force the heat up to the bottom of the pan. Mine is 2 inches decreasing to 1inch....

EPDM should do a great job of keeping the moisture out. Sounds like you are a roofer or know one. What do you plan to put over it to give it that authentic look. Obtw I now have a serious case...
The weather stinks for sure. I had a good run this weekend and got additional sap thru today. I have a few new trees that have not produced. Pulling those taps and relocating for to other trees....
I mix coal with wood. Coal was free and does a great job of heating. I get about 10 gph on a converted oil tank with flat pans. Very happy with coal as fuel source to augment the wood.
