IMO 10x10 is too small even for a half pint. Go with as big a building as you can.
And even the, chances are, in a year or two you will wish you had gone bigger.

I saw that ad a while back as well. If it was 2' wide I would have jumped on it (probably many others would have too) 2.5 is just not a common enough pan width for many of us.
I am probably going to tack in some metal if I have any left over or use wool/insulation stuff.
If I go the metal route I will probably caulk the heck out of it with RTV
In my experience with a homemade evaporator set up as a cascade - you want to have the bigger pan the one in the back. The syrup pan should be the smaller one.
