you will need a lot more venting then just soffit vents and gable end vents to get rid of all the steam. build a copula or use steam hoods and vent out.

Never converted one but the "long nut" is called a coupling nut and is available at almost any well stocked hardware store.

I would say you had niter build up. It builds up and will stick and burn on the bottom of your pans.
