Much, Much written about gravity and vacuum systems on 3/16 tubing systems. Your wont find much value on 5/16 for increased volume.
How big is your new arch? How many gallons is expected...

I never really had any problems with bees around when canning syrup. At this time I dont have bees on my property. Our daughter is now doing the beekeeping about 5 miles from me....

No it should not take that long.
About 5 minutes to the point the steam burst happens then made 15 minutes of stiring to cool down and done. Of course depends on the batch size.
