Nice start to the season!
Looks like early next week, we'll get a fair indication whether to begin tapping here in southern Grey County.

(Dimensions of our shack are 8 x 12').
To accommodate a stack exiting through the roof slope rather than the peak, we off-set our evaporator by about 1.5 feet from centre. Despite a centred cupola...
• 60 taps Saturday
• 25 gallons sap Sunday, boiled off.
There are signs that sap is running; a bit early yet. . . .
Cedar is great for starting the fire in your arch, however you'll be stoking more often than with hardwood.

A few producers to the west of us near Lake Huron have taken off small batches of syrup. Still too cold to run in our area. Tapping another 55 today in anticipation of runs beginning tomorrow.
Tapped 45 last weekend. Hardly any sap to date. Tapping another 55 today in advance of the milder spell predicted next week.
-16C here this morning. No one, to my knowledge has tapped yet in our immediate area (Holstein, ON).
Got about 10cm snow Friday night and Saturday. Enough to give us a comfortable snow base.
Thanks for the advice--very helpful!
I'm a small syrup producer in Ontario. I have a colleague who operates a CSA (Community Sponsored Agriculture) program in his small rural community in Georgia. He's interested in including maple...
Pulled our taps and buckets one week ago. At that time we had 60 ltrs from 64 taps ~ 95% season. Noticed taps are still running today. With the warm temperatures predicted Wednesday, this might be a...
