An air gap between the block and fire brick would help. Or insulation.

Some form of defoamer is about the only solution. Foam tends to get worse toward the end of the season.

If the sugar content is pretty close you’d be fine. If it is just for personal use and you see mold forming you can skim it off and reboil it without issue.

Just remember to make it sturdy. If there is any play in it when you put pressure on it to squeeze the T in, it will twist and make it not line up.
