We sell most of crop retail. I would feel guilty offering a small producer $2lb. knowing how much work goes into making a gallon of syrup
Years ago I sold some bulk syrup to a bakery. They sent a Rabbi over and he blessed my crop. A couple of chants and he was out the door. It was only good for that years crop.

We use dark or extra dark. Cook to 270. Unlike making candy or cream, you can play with it all you want. Stirring it will promote crystal growth
