As the water boils out the sugar concentrates. As the sugar concentrates the temp rises. When you hit about 219, you're done. If you keep cooking the temp will keep rising until your sugar burns.

My trees are running ok today. I got 25 gallons or so since yesterday. It's going to really warm up next week so I'll probably pull my taps on Monday and boil whatever I get til then and wrap it up.
