I would go straight out the roof. The more corners you have in the chimney the more restricted the flow is, which results in less draft.

Yes, every curve you have in the stack restricts air flow. I would just add a few more feet on the straight stack to get the smoke up and away.
Good to hear your doing something maple related while the sap isn't runnin. I made some maple candies a few weeks back, using up some syrup from 2011. I will have to try making the cream some time.
