I use this style (PE lined caps). After bottling, shrink wrap and flip bottle up side down to expose the inside of the cap to hot syrup. Leave upside down until the syrup cools. No problems with mold.

No problem adding a third pan. If you can add flues I would recommend it. Greatly increases your surface area and in turn your evaporation rate. I had my pans built but below are a couple threads...

As long as you have sap coming in and syrup going out you can probably make the thing flow in any direction you would like. If this is just a flat pan, I would keep it simple and orient...
