So 12 ounces by volume of cold syrup is 13 ounces by volume of hot syrup? I guess I missed physics in grade school.
Is it normal for the syrup level in a bottle to drop after it cools?

Natural vacuum or mechanical? What kind of flow days were you experiencing when sap was suspended? Did you have any vacuum gauges setup on the top of the line?
How long are you guys aging it for?
I run a shurflo 4088. Ran it all season only shutting down when it would freeze. Run a recirculating line to keep the diaphragm wet and it will pull all season long.

I would say 500 cfm should be adequate. A rheostat would allow you to control the blower speed. You will probably want to seal up your ash door so you aren't blowing ash and sparks out the front.
