I know its very early, but if later in the year anyone finds themselves with sap they cannot use I'll gladly take it. I was only able to make a gallon last year, this year I would like to make two.
Mostly reds as well, probably 60%. I have some japansese maples but I heard it they were not worth the time to tap. Is your syrup that dark? Mine syrup is also very buttery.
