6 in or 4 in steam pans
throwing together a quick evap setup. I only plan to run a couple inches in the bottom of the pans with a drip valve in each pan, for three pans total. should i go with the 6" deep pans or the 4" deep pans.
I'd save about $35 getting the 4" pans.

I would go with the 6" when it start foaming you will be glad you had the extra height.in

I would the 6" is your best bet.

Yes, go with 6". As you work toward the end of a boil, you are consolidating pans into one. You will need the depth.

Now I've been looking around and it seems if the pans sit in the fire, the sides seem to burn up as sap boils and splatters. Should I some how elevate the pans and bit?
I would think it would give you a burn like taste. Most of the block evaps I've googled all have the same issue. Burnt sides as the sap reduces down.

Ya the sides do scorch a little but it didn't affect the taste of my syrup last year, granted it was my first year and i only made a gallon.

As stated go with 6" I had 4" on my homemade rig last year and they were to shallow, I had to keep adding sap all the time

next question, any idea where to locally source some filters for both sap and syrup... but mainly for syrup?

Bascoms on line, or you can drive to there show room and pick them up. Unless you have some place closer
