I have a lean to off my barn which I enclosed with barn steel this summer after wrapping the exterior wall.
I would like to finish the interior side of the same wall with barn steel as well.
My question is how do I minimize the condensation in the uninsulated wall when the inside steel warms up? Should I just place a vapor barrier over the girts then install the inner steel? Do I leave a gap somewhere so the condensation can escape?
My evaporator will have a hood.

I had a similar set-up without a hood. there was a lot of condensation. If there is anyway you could use a plywood I believe that may be a better choice. then you can paint it. This is what I did i wth my current 12 x 16 sugar house.
Why finish the inside? Lots of cuts and corners and edge trims. Then you'd be thinking the ceiling should be done too with more cost, details, and work. I don't think it's worth it. Keep it open frame on inside is how Id do it. My sugar house has v-notch on the ceiling but nothing on walls.

Ok just curious! I have a lean to that is 19x16 I am working at converting to a sugar shack and wasnt sure what to do.......
My sugar house is insulated, with finished drywall, paint (of course) and trimmed. My reason and justification for the cost is that a lot of people stop in throughout the year and how can I tell them that I pride myself in a clean product if my space is not able to be clean.
The 5 senses sell product. Use as many as possible to sell your product.. Let them taste it, if you aren't boiling make cotton candy so they can smell it and make every aspect look inviting and clean. You can't really hear anything but the story and benefits and I don't want them touching it..
Maple Syrup is a gourmet food made in a shack. At least finish the shack.

I will be insulating mine for sure and I think I might put metal on parts where it might get warm and then maybe painted plywood the rest of the way around. I would put a poly panel on but I dont have a drain so not real feasible to wash it out through out the season...
