Got 2000 Gallons of 1% over the last 48 hrs, I was pretty happy with that I think the trees have only had about 10hrs a day to run, and Wednesday was quite windy, the syrup is Dark but on the edge of Amber. Hopefully the sugar comes up we have what looks like a 4 Day Freeze.
Sap is running good today. I would say I have 2 weeks left looking at the forecast, 108 gallons so far. So I hope I get the days. 2 feet of snow in the woods now, it's hard going on the snow shoes.
Made 22 gallons today, had 40 middle school kids come bye for a tour and a few lessons, also had a group from the local senior center come over in the afternoon. It was a great day in the sugarhouse. Sap is running hard tonight, I'd say nearly 100 gph. We will see what the tank says in the morning. Sugar is back up to 1.5% it was 1% last week, got inspected by the department of Agriculture today nice woman named Janice, she checked 2 bottles of pints, one dark and 1 amber, the Dark was a bit on the heavy side but the Amber was spot on. We also discussed grading and there is no Grey area as far as grading goes, if it's a 49 and tastes like amber you still should grade it as Dark robust, although their is a 4 point +/- variation in the Hanna so I don't think you would get too much gruff as long as you are within 2-3pts.
Gusher overnight, 2 GPT of last 24 hrs. Going to keep it & boil Friday night.

Thanks Bap, it's been really good lately, I can't believe how hard it is running despite not a freeze for 4 nights, still coming in around 75 GPH, made 50 Gallons of Dark Tonight. 46 on the Hanna, great tasting Syrup. I am Heading to buy some more Barrels in the Morning all mine are Full.
Still chugging along in Chatham. I think that I have about 1 week left looking at the forecast, might get 10days. Sap is a bit cloudy today but I think it should clear up tomorrow with the cooler Temps returning. Should go over 200 gallons made tonight.
Pulled in another 1000 gallons today, sap cleared up a bit, I really washed my Tanks up good & the Releaser. I should freeze up tonight & be frozen all day tomorrow I think. Going to hold on for as long as I can. Maybe a week left .
Hauled another 1000 gallons of sap today, tested 1%, the Sap is running as hard as it has all season. The Sap has that late season haze to it coming into the releaser but it looks mostly clear in the tank. There's definitely a few yeast bubbles and some moths around. Looking at the forecast I have 5-7 days left. Should have over 3000 gallons to boil tomorrow. Too bad it will only make about 33 gallons of syrup. Thankful for the R.O.
