In my opinion a gear pump style machine is the only way to go. To be clear, I have never used a paddle machine but what I see as advantages over a paddle machine are; Consistently mixed batches, less chance for air bubbles in finished product, very easy to fill containers, and relatively easy clean up.
I was told recently that they use a Hobart for sugar & cream. What's the thoughts on that?
Can’t speak as to paddle style,we have a cdl gear machine,works great,easy to clean up,paid for itself pretty quickly. Probably run 60 plus gallons through it per year
