I have a 2X6 WSE, I finish it right in the syrup pan and takeoff into a wool cone filter. You can also adjust it when you reheat to bottle it.
We also have a Leader WSE 2 x 4 evaporator. Our pan has been divided into 3 sections. We draw off small batches very close to being finished and put them in a finish / canner and finish.
I have a WSE 2x6 that I expanded from a 2x4. I boil syrup to finishing density or slightly above. Adjust density down if needed just before filtering and bottling.
We ran a 2x6 wse for about 9 years. Good unit. We did not set the mounted thermometer everyday. We used a second digital thermometer and then finished on the side with a hydrometer. We were never too far off from syrup at draw off. I think it was more convenience to finish a larger batch of 5-6 gallons of syrup. As long at your can manage temp, density, and temp at packaging you will be good to go.
