Vacuum pump temp switch

I'm rebuilding a bou-matic vac pump, it has a 1hp motor and I will wire it for 220.I want to have it controlled by a thermostat, what will I need to start it?What are the best temp settings? Any suggestions are appreciated. Thanks

i going to use this temp controller ( http://www.auberins.com/index.php?main_page=product_info&cPath=1&products_id=106 ) to trigger a relay to turn my pump and power to me relaeser it a little over kill but it ez to work with

Thats not over kill it just COOL. I just orderd one on Ebay to play with going to put it on my bottler. It is the same type as the auto drawoff so I can put in alarms and all sorts of things to keep from over heating the syrup past 185
