Last year I decided that one of the causes of creosote and soot build up on pans was the fact that most of time I was lighting the fire with paper and kindling, which makes a coolish smokey fire, and the pans were normally ice cold. You could hardly design a better combination to make creosote.

So last year I put my Lee Valley flame thrower in the arch and let it rip for almost 20 minutes before I started to build the wood fire. I recently spent some time cleaning the pans on that rig ( which is sold ) and it was the easiest clean up in the 3 years I've had it. I'm going to stick with that program this year ... especially after going through over 30 cans of Easy-off on my new rig, and I'm not done yet.

Edit
the GAST specs say the air temperature rise will be about 75-80 deg F
