Ran into an old friend with a sign fabrication shop and it seems
they are a perfect fit to help me build an evaporator, right down
to the loading dock. Any thoughts greatly appreciated!:)

Try to find some local producers and look at their evaporators. The more you look at and the different brands, the better sketch you can draw up for what you want to build. A picture is worth a 1,000 words and a hands on approach is worth a lot of pictures.

if you plan is for a wood fired arch i would think on making air over
