During syrup season we were able to purchase 60 acres adjoining our sugar camp. We tapped part of it for years, but 20 acres was across the creek and with us not owning it, we never gave it to much thought on tapping it with that creek to deal with. The trees are big with a slight southern slope, needs a thinning but almost like a park like setting right now, In fact, the big trees all were marked to be cut down years back but the deal fell through (thank God). We would like to make around 800-900 gallons of syrup a year so after this years half a crop, we figure on just tapping this section, so if another bad year comes (which it will sometime) and we make a half a crop, we will still be close to our gallon numbers we like to end up with. On a good year we will be swimming in sap. We may not be able to beat mother nature, but we can outsmart her. I am going to hate to see all those empty 55 gal. barrels in the sugar shack for a whole year. We will fix that problem next season.
