Talked to a old timer around here today about sugaring and he came up with something i never heard before. Turns out all the old timers used to skim the pans and throw the crap in a bucket and keep it and make vinegar. He of course came up with the leaving of the last sap in the pan until it went bad and leaveing nice shiny pans also.
Anybody have any further info on this idea for makeing vinegar.

My Great Aunt always made vinegar. Used to be one of the products in county fair competitions. We would save the sugar sand from the filters for several days and the sweet from this would be her base for the vinegar. I remember something about floating an egg in the sweet mixture and adding water until the egg began to sink to get the right sweetness/density. It was put into a barrel (which we still have) along with a "mother" and was allowed to work. New vinegar was drawn off in the fall and the barrel was ready to go again the next spring.
