View Full Version : How long can the sweet stay in the pan?

This is my first year using a divided pan. I have a 27"x 48" and I have boiled every 2 or 3 days. With the warm days and semi cool nights is it ok to keep the sweet in the pans or should I finish everything this weekend and start from scratch. My worry with this option, is I am not getting big runs and next week may be my last(hopefully I can stretch it for 2 more weeks.)

It can sit for a long time. Cover to keep out the vermin. If it is very warm and you worry about spoilage, just heat it to boiling for a few minutes every couple of days to kill anything that might start growing...

I have it covered and I will boil every 3 days sap or no sap.

If your worried I think you could get all that to fit into a few new 5 gallon buckets to keep the critters out and stick in the shade to help keep it fresh. You can hot seal it in walmart white buckets that have sealable lids. That will keep it good for a week. I have poured right from the evap into buckets and they will get hot and wobbly but never failed!! BUT dont run around using the handles till they cool
