Sap quality

I'm going to be tapping new trees this weekend in Waupaca co.
If the conditions are good above 32 degree days and below freezing nights, and the trees have not budded yet. Would one get good quality syrup in theory?

Last year (my first year) I collected until is stopped running and it was all good, until close to the middle of April. I'm hoping sap collecting will be ok for the next couple weeks.
