View Full Version : Taking Syrup off before it's Syrup

We are over run with sap,24 hour boiling,still can't keep up. We are finally getting the amount of sap we should be per tap. Has anybody tried taking off the evaporator front pan at 212 or 213 & storing it in some type of container to finish later. Would it keep for 2 or 3 weeks? Thinking we could run more sap through before it spoils if we didn't have to go up so high. Any thoughts or ideas out there?

I have one!

I would give just about anything right now to be overrun with sap......boy what a great problem that would be to have, down here, after the stingy two week season we've had so far!

I imagine you could pull off early and keep cold or maybe hot pack and re-finish later, but sure someone will have a better answer pretty soon.

I boil till it is close to syrup then put it in a 10L plastic jugs that i put in the freezer intill I have time to finish it.
