The bottom of my pan has deposits of thick syrup sticking to it. If I leave it there and I pour fresh sap in the pan will it burn or will it dissolve?

It should be fine if you warm it slowly and stir to get it to dissolve. If you crank it right up you might burn it.

It has the texture of taffy. Would I be better off dumping the pan and scrapping it off? I'd hate to lose all of that sap and sort-of-syrup...

I did that this year I poured sap in pan and let it sit for a day then stirred it up was just fine
