If the sap tastes bitter, make syrup anyway and keep the syrup separate to sell as commercial. Then if the saps still running hard, get all your tanks and evaporator washed up, you may go back to making better syrup.

Doubtful. After a warm spell, it's good to dump out some of the first sap that runs to get rid of any sour sap that has sat in the lines.

I had the best run of the season (so far) today with about 460 gallons.
