it seems when i boil at night i get about 22 gallons of evap an hour
and when i boil during the day i get 18 gallons of evap an hour.
why is that? thanks bob.

The air is generally cooler so you get better evaporation. The colder the air the better!!!!!

Daytime gallons are bigger than nitetime gallons.

I don't know about you but some of us after five o'clock have a beer factor that makes things go better at night, or at least it seems so. The math does get a little fuzzy but as long as you don't burn the pans your good to go. :)

I have the exact opposite effect here. Can boil from sunup to sundown with great numbers but as soon as the sun disapears you can watch the boil and even hear it slow down. No boiling sodas so don't blame them.

One thing that could make a big difference is the air is cooler at night giving you better draft on your arch giving you better fire and temps in your arch!
