how hot can you bottle at i know 188 is the temp but what if you were at
200 or 210.

When we do bread and butter pickles it comes out of the boiling brine right into the hot jars and the lid goes on so I do not think it matters, I canned a batch today (syrup that is) and I bet it was well over 180 I think that is just the minimum.

I can at that temp all the time. From the finish pot to a filter to the bottle or jug. Just rember any time you heat syrup you need to filter it or you get sand. I work in small amounts so when it already hot I go to the jug with it. Just don't let it go below 180 then you need to warm it again.

Are you using plastic bottles? I would'nt go that high with those. The plastic will be plenty "soft and stretchy" at that point, which is'nt good. Keep the plastic between 180-190 for safety.

I reheat the syrup to 198 degrees, filter, and start filling plastic jugs. When the temp drops below 185, I stop.
