well we have a 4x12 wood fired and we want to get a new 600gph ro we have 4000 taps if we run the new ro at 10% will the 4x12 be too big? we are also toying with geting an oil fired arch too, what size should we get if we were to buy one?

I can do the math for you. If you have 6,000 gallons of 2% sap and run it to 10%, that will give you 1200 gallons of concentrate. I would guess you are going to be around 150 to 170 gph with a 4x12, so you are still going to be boiling 6 to 8 hours.
So the answer to your question is that your evaporator is nowhere near too big in my opinion, should be a good size.
