Anyone know where I can find a brix/temperature adjustment chart? I'm boiling for the first time here, doing small amounts on my stovetop, but I can't seem to get the sap/syrup any hotter than 195F and I haven't found a chart that goes past 165f.
*edit*.. nmind, i'm getting it up to 211 now..

Is this what you are looking for?
temp syrup density (baume)
209 - 32.0
202 - 32.25
193 - 32.5
185 - 32.75
176 - 33.0
140 - 34.0
60 - 36.0

Thanks, although I'm not sure how that would fit in with the chart I saw earlier that only went up to 165f.

Thanks, knowing the right search terms really helped! Unfortunately this batch was so small that the hydrometer became almost useless as there wasn't enough syrup to completely fill the hydro cup, but it tastes just fine, so I'm happy with it. I'm sure my second attempt will be more precise..

Just put the syrup in a mason jar hot put the lid on and save it till you have more syrup then add the 2 together and you good to go.
Or you can just use temp and call it close enough for now and EAT it!!
