someone told me they store finished syrup in 5 gal. buckets and heat up later to bottle. will syrup keep like that, or does it need to be refridge or frozen or room temp. or ?.

I use old soda kegs aka cornellious kegs. I can pick them up locally for 25$ each and they come disinfected. They are all stainless. When hot packed they should keep forever. I do know of someone that puts a pound or two of nitrogen on them to make them under pressure. I may research that as well. The storage in a plastic bucket will drop the grade. Plastic does breath.

i have a buddy that just putts them in a bunch of stainless milk pails with lids untill he takes them in for the big cash in

I store in 2 1/2 gallon containers I get from a beekeeping company (Mann Lake) and then put them in a chest freezer. Keeps well for a long time that way and I can as needed.

I store all my syrup in 5 gal blue plastic drums right after filtering it from the evaporator. I reheat to 198 deg., standardize the density and refilter into consumer sized jugs as needed.
