I think it comes from hot syrup in plastic bucket. Any thoughts?

My pickle buckets smell good until you put hot liquid water in them, then the pickle smell is released quite a bit. I'd try keeping your hot syrup in stainless steel as much as possible and not in plastic, until you bottle it.
Also look at all the steps in your process and you'll probably find the culprit. For example: I don't store gasoline or any other such items in the sugarhouse during the season to try to prevent spoiling the product (and blowing myself up of course).
P.S. I hope you haven't boiled any yellow sap.:o
