I taped about 6 days ago, didnt put a ton out, so that means i really dont have enough to boil. How long will that sap stay good if we factor in the temp which is 20's 30's. NO ice forming in the buckets.
Overall sap looks clear,
when do you think sap is past its prime?

If it is clear doesn't taste funky it is probably still good. Keep it out of the sun and as cool as you can. If you want to make sure, boil down a quart inside and taste it! Tiny batches turn out real light but any bad flavors will show up.

some times its clody and bacteria is present but you usually get dark stronger tasting syrup!

You could freeze it if you have the space. Otherwise just freeze some of it and add the frozen blocks to your sap storage to keep the rest good and cold. Boil as soon as you have enough or have the time. You can also boil what sap you have and take the heat away, make sure you don't get too low on sap and burn the pan. The sweetened sap will be sterilized and keep for a few days if it is just cool and not cold where you are.
